Please can you explain what a 'low carb' food is?

I am sure this is going to appear rather a pathetic question but I truly do not know what foods are low in carbs, this is because everything I can think of that would be a main ingredient in my meals (prior to my diet) would comprise bread, pasta, rice or potato and I am really struggling to find foods that fill me up which aren't of the named foods and are low in carbs... please help.

This is not a ‘pathetic question’ as it can be a very confusing area. 

 

High carbohydrate foods are the foods that you have mentioned i.e. bread, pasta, rice etc. and do tend to form the bulk of a lot of meals.  Low carbohydrate foods contain a lower percentage of carbohydrate and are foods such as vegetables, fruit and nuts. So, if you are looking to reduce your carbohydrate intake, I would advise, for example, reducing potatoes or rice with a meal and increasing your vegetables to fill up your plate.

 

I should also mention that the type of carbohydrate you eat is also very important. White, processed carbohydrates (such as white bread, pasta and rice) very quickly turn into sugar in the blood, whereas the brown, whole-grain varieties do not.  I would always recommend eating wholemeal bread, brown rice or wholewheat pasta or noodles in preference to the white varieties, as they are much more filling and contain significantly more vitamins and minerals.  If you find the change difficult, mix the two types together for a while until your palette adapts.
