Vegetable Chilli

400g can chopped tomatoes
130g can red kidney beans
1 tsp chilli powder (or to taste)
1 medium green pepper
1 medium red pepper
1medium onion
6 mushrooms
10ml extra virgin olive oil


1. Chop all the vegetables and saute in the olive oil. Rinse the kidney beans and add to the vegetables.
2. Add the chopped tomatoes and chilli powder then simmer until tender (around 30 minutes)
3. Serve with wraps / rice / salad / jacket potato etc. just make sure you add the extra calories in
