Carrot, Coriander & Sweet Potato Soup

1 large sweet potato
2 leeks
3 carrots
1 Knorr chicken stock cube
1/2 large tin of chopped tomatoes
2 tsp Ground Coriander
1-1 1/2 pints of water
salt and pepper to taste


1. Chop all veg.
2. Sweat the leeks and the carrots in a large pan.
3. Add the coriander and the chopped tomatoes.
4. Dissolve the Knorr cube in the water and fill to cover veg by 1 - 2 inches.
5. Simmer until very soft and season to taste.
6. Leave to cool and then blend until smooth or serve chunky.
